After an hour or so of thinking and drinking I have come up with a couple more cocktails.
1.5 pt. Spruce (A Vermont made cane spirit with spruce tips)
0.5 pt. honey syrup (2:1 honey to water by volume)
.75 pt. fresh squeezed lemon juice
1-2 dashes Angostura aromatic bitters
Place all ingredients into a shaker with ice and shake for 10 seconds. Double strain into a coupe.
This drink is a slight riff of the classic Bees Knees with a sweeter forest spirit and bitters to create a drink comparable to that of the Everfree Forest.
2 pt. Laird's Straight Applejack 86
1 pt. Homebrewed Dry apple blossom honey mead 14% abv
2 dashes Fee Brothers Orange Bitters
Place all ingredients in a mixing glass with ice and stir 30-35 times. Strain into a Old Fashioned glass.
This Drink if you haven't noticed is a straight riff off a Manhattan. Using the classic 2:1:2 ratio with the Applejack in replace for whisk(e)y and the mead in place of the vermouth on top of the orange bitters to keep it light and fruity. I think this just might be close to what the citizens of Manehattan might order after a long day at work.
